Cultivation is the typical one of the Umbrian hills, both in terms of cultivar types, Moraiolo, Leccino and Pendolino as pollinator, and for the pedoclimatic environment. The olive grove rises in the hills of the municipality of Montecchio, Terni, on the border with the municipality of Baschi, above Corbara Lake at an altitude of about 350 meters.

Since the initial plant, the olive grove has been cultivated following natural methods using organic products for fertilization and to combat pests.

From end February to beginning April, plants are pruned to remove the external branches that have been productive in the previous year and inner ones to create ventilation and allow sunlight to penetrate the plant. Also the branches that are not productive (suckers) are removed and the shape of the plant is modeled for the best growth and to stimulate production. The soil is worked with the plow and all the residues of  pruning are shredded and then buried also for the benefit of the nutrition of the land itself.


When the vegetative activity starts, typically mid April, we provide fertilization with organic products, as poultry.

At the end of June we begin with first monitoring to verify the presence of the olive fly, the worst enemy of the olives. The traps are installed with pheromones to attract the fly, capture them to verify presence and intensity. In order to prevent massive attacks, these controls are repeated in the following months until time of collection. In case of significant presence of the fly we proceed with few types of  treatment processes depending on the intensity and extent of the phenomenon; in any case using only natural products. Between May and late August one / two preventive treatments are carried out for fungicidal purposes with the Bordeaux mixture (cupric sulphate with calcium hydroxide). In the last ten years, with inactive production, the olive grove has not undergone any treatment. This will be an important argument in support of our request for Bio (organic) certification to reduce to zero the conversion time.

This has allowed us to request the zeroing of the conversion time for the certification of organic production, obtained in 2019.

Also in 2019 we got the DOP certification Umbria Colli Orvietani. In reality it is a reactivation because, already in 1996, the production was certified DOP Umbria. And we are grateful to the certifying body Parco 3A for having reassigned to us the same initial operator number, the No. 138, as evidence of a history of attention to quality that starts from afar. Today the DOP Umbria operator number is over 6500.
